Project 365 #45 Sausage For a Crowd

Here's how we have cooked sausage anytime we like.  It's like having fast food that's really Slow Food.  For this batch we started with 3 pounds of Breakfast Sausage from Miiller's Smokehouse in Llano.

We prepared and cooked them, then packaged in plastic bags, about a week's worth for the fridge and the rest in the freezer.  We have cooked sausage patties for breakfast, dinner-breakfast or sandwiches.


Weigh 2 oz. of sausage and roll into balls.


 Between sheets of waxed paper, flatten patties with a saucer or small plate as flat as you can get them and still be able to peel them off the waxed paper, they will shrink a lot.


Fry in batches of as many as you can get in a pan.  Eat or store.  Great project for a slow evening, if you ever have any of those.  We cook for entertainment, so it's a happy time for us.
